Interview Fridays: Cloud 9 Orchard

This weeks ‘Interview Fridays’ is with the 2015 ‪#‎goodfoodaward‬ winner for her Italian ‪#‎EVOO‬ is May Chevalier of Cloud 9 Orchards. We are honored to feature her oil in our Monterey box! This is what true olive oil should taste like! It literally makes you feel like you are on the farm drinking it straight from the mill.

Q: How long have you been honing your craft?
A: I started the olive orchard 6 years ago and have been producing extra virgin olive oil for 5 years.

Q. What is your favorite product you produce?
A: I don’t have a favorite oil as they are equally good to me. I prefer to use the mild Spanish Varietal for milder food such as quinoa salad, faro salad, for dressing green salads, for sautéing vegetables and for baking cakes and cookies.
I like to use the Italian varietal which is more herbaceous and slightly more intense oil for pasta and sauces, or for roasting vegetable roots, to complement soups, to marinade bbq meats and vegetables.
The French varietal is it floral and mild. I love to use it to make ratatouille to add to the aromatic herbs that are used to make that dish. This oil goes well with mild fish and poultry dishes.

Q. What inspires you?
A: Growing sustainably, being a good steward of the land and producing award winning olive oil is what inspires me. Those 3 things are linked very closely.

Q. What is one of your favorite parts of being an artisan?
A: Meeting customers who enjoy and recognize excellent olive oil makes me very happy. I work to educate people the difference between a premium extra virgin olive oil and a commercial and often fake olive oil. Teaching people to eat healthy and simply makes me very happy.

Q. What is on the horizon for you this year?
A: I look forward to cross blend the different varietal oil to create different bouquets of aroma. They will still be extra virgin olive oil. As the California olive oil industry matures, consumers are more knowledgeable and sophisticated. I think it would be fun to address that group of people.
